Newrest is currently looking for a Production Kitchen Manager to run its kitchen under the direction of the Unit Manager for our facility in Alajuela, Costa Rica .

We are looking for someone who will be able to move to Costa Rica soon. This is not a temporary assignment. This individual will direct and coordinate the production processes, complying with the established procedures and specifications.

This individual ensures the rational use of equipment, materials, raw materials, products, as well as the efficient performance of the department.

Principal Responsibilities

  • Supervise and control the production process and organize staff at work stations, according to daily needs and schedule according to flight itineraries, taking into account the characteristics of the client's requirements, as well as the skills and abilities of the available human resource.
  • Ensure compliance with the guidelines of the HACCP System and Good Manufacturing Practices applicable to the Production process, as established in the Manual of Hazard Analysis and Critical Control Points and Manual of Good Manufacturing Practices.
  • Follow up and ensure compliance with the guidelines of the Hazard Analysis Manual and Critical Control Points applicable to the Production processes
  • Responsible for the Critical Control Points : Cooking of critical foods, Cooling of critical foods.
  • Ensure control of the raw material through the following actions : compliance with specifications in the process lines, ensure that each process line produces only what has been defined as a production plan, review of the explosion of raw materials to monitor products that are being consumed (over consumption) above what is projected, participate in the meeting of raw materials with action plans and monitoring, ensure that product requisitions are correctly assigned by type of customer , validation of recipes by technicians who prove their veracity.
  • At the Human Resources Administration level, monitor the following actions : identify the training needs of the team members and ensure compliance with training plans, ensure compliance with the assigned staff needs, ensure that team members are trained when a new product is going to be manufactured, ensure that team members know the specifications required for its manufacture, administer the disciplinary actions due to indiscipline of the personnel, non-compliance with specifications, deterioration of the infrastructure, loss of product without apparent cause, maintains a good work environment and ensures that its staff has the necessary requirements to develop their activities, maintains a motivated team, ensuring that the conditions of justice, respect for equity prevail in their assigned areas, constantly supervises through rounds in the different areas process during your tour no, to ensure that the operational staff remains in their assigned process areas, carrying out the production plans, scheduled jobs that were assigned to them, ensuring that the specifications are known by their staff and that they are met in the process lines , during cycle changes and introduction of new products Ensures that design specifications are met and plans the activities within the processes that are required to successfully implement a product.
  • Keep the staff updated on modifications or adjustments in the product or process, published in the VERA and other documents.
  • Ensure the identification of products according to guidelines.
  • Maintain direct communication with the Operations Control Section and other support sections, to ensure that service changes, additional services, firm order, or any other requirement are coordinated and prepared on time.
  • Carry out investigations and take actions on deviations in topics such as : consumption of raw materials, compliance with recipes, and / or customer specifications, quality and taste of food prepared at the plant (Hot Kitchen, Cold Kitchen, raw materials, Bakery, and cake shop).
  • Responsible for the validation of recipes in his area, as well as the quality of the product he delivers, in terms of presentation and taste.
  • Responsible for the approval and substitution of raw materials in case any raw material is not in the company and needs to be replaced in conjunction with the sales section.
  • Responsible for the development of new products in accordance with the client's requirement, ensuring that they comply with the safety, quality, and costs established in the design.
  • If a product or service is retained, the technical criteria in relation to its final disposal must be issued, together with the Quality Control section and the Operations Manager.
  • Identify training needs of the staff under his charge and ensure compliance with the Training Plans.
  • Ensure order, hygiene and good condition of the Cold Kitchen, Bakery and Hot Kitchen infrastructure. Coordinate with the Human Resources Section the fulfillment of the assigned personnel quota.
  • Complete all the records regarding your position.
  • Comply with the waste management procedure.
  • Comply with the Quality, Food Safety and Environment System.
  • Respect the policies of the NEWREST Group with responsibility for their specific area.
  • Other functions not previously listed and entrusted by the Management.
  • Qualifications

  • Degree in Food Technology, Industrial Engineering, or other similar field
  • 3-5 years' previous experience as a Kitchen Manager
